This weeks' topic invokes a lot of emotions in me. What was once just a necessity has become an opportunity for ministry and simultaneously a constant reminder that my body is not invincible.
Food.
So, as a way of being thankful I will share my top 3 current favorite simple go-to meals for me (Still love my substantial beef).
1. Stuffed Sweet Potato
Ingredients: (multiply for more)
1 Sweet Potato
1 C. (or roughly) of cooked ground beef. I like to cook it with garlic, onions and the red spices-paprika, chili powder, cayanne and cummin. Throw in some salt. But you can flavor it as you wish.
Sour Cream
Grated Mozarella
Directions: While browning the meat, throw your sweet potato in the oven. Once the Sweet Potato is cooked almost through, cut it open top it with the meet mixture and grated cheese.
Enjoy with Sour Cream on top.
2. Stuffed Peppers
Ingredients: Similar to above, just use a pepper-color of your choice, they all taste great.
For the beef it is crucial to add the above spices or your meal will be kind of blah.
Also have some salsa and tomatoes on hand.
Directions: Cut your pepper in half, butter the edges and put in the oven greased edge down to cook. (about 375) while your beef is browning. Cook for 15 minutes, then pull out and stuff the pepper with ground beef and salsa, sprinkle with cheese and tomatoes. Pop it back in the oven, when the cheese is melted you can take it out.
Enjoy with Salsa and sour cream
3. "Food bank" chili (feeds at least 4)- Best as a crockpot meal
1 pound of cooked ground beef
1 can of black beans
1 can of pinto peans
1 can of kidney beans
1 can of beans of your choice
1 can of corn
1 small can of fire roasted chilis
2 spoonfuls of salsa (preferably homemade)
2-3 garlic cloves -diced
1/2 an onion -diced
Season generously with: chili powder, paprika, cumin, salt, and pepper.
Cook on a low temp all day or in a pot on the stove at medium temp (not sure how long that takes).
Enjoy with corn bread, tortilla chips, or almond bread.
Top with Sour Cream and Cheese and delight your taste buds.
