A few years back I posted this post: 12 Lessons I've Learned in Life . That was 2009. I didn't write my post last week. Carrie, we are losing steam. Last week's topic was "words of wisdom" so there are my 12 words of wisdom from 7 years back. One, I would reword a bit..He's more than just a fixer; He's a Father- a good good father. #8: It's not my job to fix people...but point them to the Father, who loves them in the midst of their brokenness.
I guess I am still learning to not try to fix people. I see things so black and white in a fuzzy, gray world. And really when some things ARE black and white but someone chooses to live in the gray anyway- all I can do is point to Him, invite them to hear the truth and pray...A LOT. Because in case you weren't aware..prayer makes an incredible difference in the hearts and lives of people. This good Father lets us join in the conversation and His heart is moved with compassion when we pray. My favorite story of this is Abraham. Did you ever check out this old post? Three tasty beef meals.
This weeks' topic invokes a lot of emotions in me. What was once just a necessity has become an opportunity for ministry and simultaneously a constant reminder that my body is not invincible.
Food.
So, as a way of being thankful I will share my top 3 current favorite simple go-to meals for me (Still love my substantial beef).
1. Stuffed Sweet Potato
Ingredients: (multiply for more)
1 Sweet Potato
1 C. (or roughly) of cooked ground beef. I like to cook it with garlic, onions and the red spices-paprika, chili powder, cayanne and cummin. Throw in some salt. But you can flavor it as you wish.
Sour Cream
Grated Mozarella
Directions: While browning the meat, throw your sweet potato in the oven. Once the Sweet Potato is cooked almost through, cut it open top it with the meet mixture and grated cheese.
Enjoy with Sour Cream on top.
2. Stuffed Peppers
Ingredients: Similar to above, just use a pepper-color of your choice, they all taste great.
For the beef it is crucial to add the above spices or your meal will be kind of blah.
Also have some salsa and tomatoes on hand.
Directions: Cut your pepper in half, butter the edges and put in the oven greased edge down to cook. (about 375) while your beef is browning. Cook for 15 minutes, then pull out and stuff the pepper with ground beef and salsa, sprinkle with cheese and tomatoes. Pop it back in the oven, when the cheese is melted you can take it out.
Enjoy with Salsa and sour cream
3. "Food bank" chili (feeds at least 4)- Best as a crockpot meal
1 pound of cooked ground beef
1 can of black beans
1 can of pinto peans
1 can of kidney beans
1 can of beans of your choice
1 can of corn
1 small can of fire roasted chilis
2 spoonfuls of salsa (preferably homemade)
2-3 garlic cloves -diced
1/2 an onion -diced
Season generously with: chili powder, paprika, cumin, salt, and pepper.
Cook on a low temp all day or in a pot on the stove at medium temp (not sure how long that takes).
Enjoy with corn bread, tortilla chips, or almond bread.
Top with Sour Cream and Cheese and delight your taste buds.

Looking forward...
Event planner, coordinator, if we can dream it-it can happen. That's been me..my whole life. Until a year and a half ago...I lost sight of my ability to even want to try to create. It was sad. I felt like part of me was missing. I wondered if it ever would come back.
It was enough to look forward to getting out of bed, to be able to walk and to stand up in the shower for more than five minutes. I looked forward to the day when I would run again- and I have, a little. Those days are still coming. I look forward to full function. To the days when I can join someone in their home and eat whatever is put before me with no discouragement of feeling crummy.
Little by little I looked forward to new things- I looked forward to a garden- and succeeded. I looked forward to a bike to ride-and the day it was fixed up it was fantastic.
But more exciting- I am beginning to dream again, to look forward to things that are not yet in existence and to know they will come. When we call on Jesus- He answers and shows us great and mighty things we do not yet know. He is God of the future, and He likes to dream with us.
He actually designed me to look forward to events. It's part of the hospitality piece of my life that is returning slowly. Each month I gain a little and what fun it is to have the energy to pour out a little again. Fill up my cup Jesus to overflow into the saucer for others to drink.
