Had my friend Heather over to hang out tonight and so I made these delish nachos! I thought I'd share the recipe. We have some lentils in our cupboard given to us by a friend from Pakistan when she left back to her country and it got me searching the internet for some good recipes. I tried them last summer and have been craving them for a while now. They really hit the spot! I threw on some sour cream and used some homemade salsa and a few minor alterations based on what we had around (such as cheddar cheese instead of jack, etc. And the lentils I used were red split lentils.
